Ingredients

  • 8 oz Cream cheese
  • 8 oz Pepper jack cheese
  • 8 oz Sharp cheddar cheese
  • 1 Can Rotel undrained
  • 1 Onion diced
  • 1 lb Mild or hot Italian sausage
  • 1 Tbsp Minced garlic
  • 1 Can Your favorite beer
  • 1 Tbsp Dijon mustard
  • Your favorite barbecue seasoning
  • Salt, pepper, and garlic powder, to taste To taste

Instructions

  • Cook the Italian sausage in a pan on the stove with the diced onion and minced garlic.
  • Season with salt, pepper, and garlic powder as it cooks.
  • Combine the cooked sausage mixture with the cream cheese, pepper jack, cheddar, Rotel, beer, and Dijon mustard in a pan or cast iron skillet.
  • Season with your favorite barbecue seasoning.
  • Place on the smoker at 225°F for 2 hours.
  • Give it a good mix halfway through.
  • Serve warm.
