Richard’s smoked cheese potatoes are a rich, comforting side made right on a Pit Boss smoker. Top this cheesy goodness with optional extras like bacon, jalapenos, or green onions. The result is a creamy, smoky, slightly crispy dish that works perfectly alongside barbecue mains.

Equipment

  • 1 Smoker I use my Pit Boss Smoker- my ride or die!
  • 1 Foil Pan
  • 1 Spoon

Ingredients

  • 28 oz Frozen Hash Browns
  • Salt to taste
  • Pepper to taste
  • Garlic Powder to taste
  • 8 oz French Onion Dip
  • 16 oz Shredded Cheddar Cheese
  • 1-2 Cans Cream of Chicken Soup depending on how creamy you want them
  • 1 diced Onion

Instructions

  • Preheat smoker to 275°F
  • Add hash browns to a pan and season.
  • Mix in French onion dip, cheddar cheese, cream of chicken soup, and diced onion.
  • Stir everything together well.
  • Smoke for 1–1½ hours, mixing halfway through.
  • Pull the cheesy potatoes off the smoker, let them cool just slightly.
  • Then serve them up alongside ribs, chicken, or whatever else you’ve got sizzling at your BBQ—dig in and enjoy every smoky, melty bite.

Notes

Instead of using salt, pepper, and garlic powder- you can substitute for your favorite BBQ seasoning.
