Ingredients

  • 1 lb Rotini pasta
  • 1 cup Mayonnaise
  • 1 cup Sour cream
  • 2 tbsp Tajin seasoning
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Garlic powder
  • 1/2 cup Cilantro chopped
  • 2 cans Southwest corn drained
  • 1/2 cup Red onion diced
  • 3/4 cup Cotija cheese crumbled
  • 1 Lime Juiced
  • 1/2 tsp Chili powder for topping

Instructions

  • Cook the pasta: Boil rotini in salted water until al dente, according to package directions.
  • Cool the pasta: Drain and run under cold water until fully cooled. Set aside to drain well.
  • Make the dressing: In a separate large bowl, combine mayonnaise, sour cream, Tajin, salt, pepper, and garlic powder. Whisk until smooth.
  • Add the mix-ins: Stir in cilantro, corn, red onion, and lime juice.
  • Combine: Add the cooled pasta to the bowl and toss until evenly coated.
  • Finish and chill: Fold in half of the cotija. Chill at least 30 minutes before serving.
