Ingredients
- 1 lb Rotini pasta
- 1 cup Mayonnaise
- 1 cup Sour cream
- 2 tbsp Tajin seasoning
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp Garlic powder
- 1/2 cup Cilantro chopped
- 2 cans Southwest corn drained
- 1/2 cup Red onion diced
- 3/4 cup Cotija cheese crumbled
- 1 Lime Juiced
- 1/2 tsp Chili powder for topping
Instructions
- Cook the pasta: Boil rotini in salted water until al dente, according to package directions.
- Cool the pasta: Drain and run under cold water until fully cooled. Set aside to drain well.
- Make the dressing: In a separate large bowl, combine mayonnaise, sour cream, Tajin, salt, pepper, and garlic powder. Whisk until smooth.
- Add the mix-ins: Stir in cilantro, corn, red onion, and lime juice.
- Combine: Add the cooled pasta to the bowl and toss until evenly coated.
- Finish and chill: Fold in half of the cotija. Chill at least 30 minutes before serving.
