Ingredient Notes & Substitutions
- Chicken: Chicken breasts or thighs work in place of rotisserie chicken. For extra flavor, grill them first to get a nice char, then shred or dice them and add them to the crock pot.
- Velveeta: Regular Velveeta works in place of queso blanco.
- Cheese: Regular Colby Jack works in place of spicy Colby Jack, and shredded pepper jack is a great way to add some heat.
- Taco seasoning: Any taco seasoning packet works. I like Dano’s.
- Cilantro: Use as much as you like, or leave it out if it isn’t your thing.
Tips for Success for the best Crock Pot Chicken Queso
- Cube the Velveeta so it melts evenly.
- Stir halfway through so nothing sticks to the bottom or sides.
- Keep the crock pot on warm while serving so the queso stays smooth.
Serving Suggestions
Serve with tortilla chips, tortilla scoops, or warm flour tortillas for dipping. It’s also great spooned over nachos, tacos, or burritos.
Storage & Reheating your Crock Pot Chicken Queso
Leftovers keep in the refrigerator in an airtight container for a few days. Reheat in the microwave or on the stove over low heat, stirring in a splash of milk if it has thickened.
